Mmmmmm....



Last week when I was checking out a blog that I look at occasionally, I found some of Cafe Rio's recipes! YAY!! I love Cafe Rio. Haven't tried it yet, but plan to in the next couple of weeks. Enjoy. Let us know if you try it and what you think.

Cafe Rio Sweet Pork :


1 pork roast, 1 1/2 cans coke, 1 cup sugar, 1 (7 oz) can chipotle chilies in Adobo sauce, 1 heaping tsp dry ground mustard, 1 heaping tsp Cumin, 1 tsp minced Garlic. Remove the chilies from the can of adobo sauce and throw away, saving as much sauce as possible. Add all ingredients in the crock pot and cook on low for 7-9 hours until the pork pulls apart with a fork. When it is tender, shred the pork with a fork, and put back in the pot to serve in the remaining sauce.


Cafe Rio Creamy Salad Dressing:


4 TBSP salsa verde(green salsa), 1 1/3 cups sour cream, 3/4 cup mayo, 1 bunch cilantro, 1 package ranch dressing mix, 2 cloves of garlic, 1/8 tsp tabasco sauce, juice of two limes (can add more to taste) Mix all ingredients together in a blender. Start with 1/2 bunch of cilantro leaves and add more to taste. It might help to let dressing sit in the fridge for a few hours to let the flavors mix. (Note: I made this with low fat/no fat ingredients and still very good)


Lime Rice:


1 Cup dry rice, 2 Cups chicken broth, 1 garlic clove minced, 1 tsp grated lime zest, 2 TBSP lime juice, 1/2 tsp salt, 2 TBSP mince cilantro (optional, add after cooking) Combine all ingredients. Bring to a boil. Cover and then simmer until tender.


Black Beans: (we actually prefer pinto beans, but sure it would work too!)


2 Cans black beans, 1 tomato chopped, 1/2 onion chopped, 1 clove garlic minced, 1/2 tsp saltCombine all ingredients, bring to boil, reduce heat and simmer 20 minutes.
