SURPRISE!!!






Mimi, Papa, and Riley decided on Friday afternoon to come visit this week and attend Dave's (U of U) graduation. We decided not to tell Kaden until they knocked on the door....he was shocked and thrilled to say the least! :-) They are having a great time together. Last night ran through the sprinklers, played at the park, had root beer floats, and wrestled with Kyle. Today we went bowling and to the duck park to feed the ducks and play. SO, SO FUN! Kaden told me today that Riley's old house is just too far away and she needs a new one in Utah! We hope!!

Utah Blaze




Friday night we went to the Utah Blaze game (arena football) with Ryan, Kerry, and family. Ryan got free tickets, and we thought we'd check it out....overall it was a little slow and they weren't very good. HOWEVER, it was mascot night and Grisbee (the mascot from the Grizzlies...hockey) and Cosmo (BYU's) were there. Score! Kaden was in hog heaven and that's all he cared about. Well, that and the popcorn! He kept telling us that Grisbee was waving to him. We left at halftime, and probably wouldn't pay to go. But, fun to try once and definitely fun to go for free!

Last week when I was checking out a blog that I look at occasionally, I found some of Cafe Rio's recipes! YAY!! I love Cafe Rio. Haven't tried it yet, but plan to in the next couple of weeks. Enjoy. Let us know if you try it and what you think.

Cafe Rio Sweet Pork :


1 pork roast, 1 1/2 cans coke, 1 cup sugar, 1 (7 oz) can chipotle chilies in Adobo sauce, 1 heaping tsp dry ground mustard, 1 heaping tsp Cumin, 1 tsp minced Garlic. Remove the chilies from the can of adobo sauce and throw away, saving as much sauce as possible. Add all ingredients in the crock pot and cook on low for 7-9 hours until the pork pulls apart with a fork. When it is tender, shred the pork with a fork, and put back in the pot to serve in the remaining sauce.


Cafe Rio Creamy Salad Dressing:


4 TBSP salsa verde(green salsa), 1 1/3 cups sour cream, 3/4 cup mayo, 1 bunch cilantro, 1 package ranch dressing mix, 2 cloves of garlic, 1/8 tsp tabasco sauce, juice of two limes (can add more to taste) Mix all ingredients together in a blender. Start with 1/2 bunch of cilantro leaves and add more to taste. It might help to let dressing sit in the fridge for a few hours to let the flavors mix. (Note: I made this with low fat/no fat ingredients and still very good)


Lime Rice:


1 Cup dry rice, 2 Cups chicken broth, 1 garlic clove minced, 1 tsp grated lime zest, 2 TBSP lime juice, 1/2 tsp salt, 2 TBSP mince cilantro (optional, add after cooking) Combine all ingredients. Bring to a boil. Cover and then simmer until tender.


Black Beans: (we actually prefer pinto beans, but sure it would work too!)


2 Cans black beans, 1 tomato chopped, 1/2 onion chopped, 1 clove garlic minced, 1/2 tsp saltCombine all ingredients, bring to boil, reduce heat and simmer 20 minutes.

Adoption


As most of you know, we're still on our journey to adopt our second baby. We love and appreciate all the help and support we've received as we're actively searching for the next member of our family. You are all great! We love you! If you know of a possible adoption situation, would you please let us know about it?!

We know that as we do our part, we will be blessed. Thanks.

Areospace Museum




Last week we went to the Hill Areospace Museum with Kerry, Tanner, Colby, and Sadie (who were on spring break). We got to see lots of really cool planes and go in the play room....they had different activities for the kids to do, flight simulators, etc. We played for a long time. It was fun to go all together and even went to McDonalds on the way home. Can't beat that.

I WANNA GO BACK!


Isn't this a great view? This is the view from the condo that we stay in when we go to Maui. I don't know if its the weather (we actually had snow today...its APRIL!) or going to Kyle's work conference last week (it was a luau complete with entertainment from a group of BYU students) or what....but I WANNA GO BACK. No plans or anything, just wishful thinking.

So, as I was thinking about this today I was thinking about one of our trips where they were serving lunch on the way over. Our choices were chicken or beef....but when they got to us they were out of chicken and the beef was burned. How funny is that?! So, we actually got 2 (nasty!) and the hope was that we could pull enough beef out that wasn't totally charred. Anyway, the question of the day is this: chicken or beef? When you go to Red Robin for dinner do you order a burger or a chicken burger? Can't wait to see the votes...
